For many years it was assumed that the response was based on the chemical composition, eg, sugars versus starches. It was thought that starches were slowly digested and absorbed, causing a small increase blood glucose levels, while sugars (glucose, sucrose, fructose, lactose) were readily digested and absorbed, leading to high blood glucose levels.
