Mudjadara is an Arabic word that means “pockmarked.” Mainly, it is made up of lentils, rice and onions. This is a simple traditional Middle Eastern dish. Mujadara is a seriously inexpensive vegetarian meal and it is easy to make. For this recipe, we use Primera Rice. This can be purchased here. Red rice makes this mujadara recipe healthier and more flavorful.
Red Mudjadara
Ingredients
- 1 Cup of Primera Red Rice
- Olive Oil
- 1 Large Size Onion, Thinly Sliced
- 4 Medium Size Garlic Cloves
- 2 Bay Leaves
- 1 Tablespoon of Ground Cumin
- 1.5 Teaspoons of Himalaya Salt
- ¼ Tablespoon of Black Pepper
- 3 Cups of Water
- 1 Cup of Lentils, Soaked Overnight
- Cilantro
Directions
Red Noodle Rice
- Heat up some olive oil in a pan and add in 1 thinly sliced large onion.
- Cook the onion until deeply caramelized.
- Keep some of the caramelized onion for later use.
- Add in 4 medium size garlic cloves, 2 bay leaves, 1 tablespoon of ground cumin, 1.5 teaspoons of Himalaya salt and ¼ tablespoon of black pepper to the remaining caramelized onion.
- Fry until fragrant.
- Add 3 cups of water into the pan, and bring to boil.
- Add in 1 cup of Primera Red Rice, and simmer for about 5 minutes.
- Add in 1 cup of soaked overnight lentils.
- Mix well and simmer for another 30 minutes.
- Serve together with caramelized onion and fresh cilantro.
