Harira is a traditional Moroccan soup. It is tomato-based soup with legumes like lentils and chickpeas, fresh herbs and spices. It is served throughout the year and usually eaten to break the fast-during Ramadan. This menu typically thickened with broken vermicelli pasta or rice. Ingredients
1.5 Cups of Primera Red Rice
Olive Oil
1 Large Size Onion, Thinly Sliced
1 Cup of Diced Chicken
1 Cup of Chickpea, Soaked Overnight
1 Tablespoon of Himalaya Salt
1 Tablespoon of Grated Ginger
1 ½ Teaspoons of Black Pepper
1 Teaspoon of Ground Cinnamon
½ Teaspoon of Turmeric Powder
2 Cans of Tomato Paste
6 Cups of Water
1 Cup of Lentils, Soaked Overnight
3 Medium Sized Tomatoes, Sliced
1 Cup of Parsley
1 Cup of Celery
¼ Cup of Cilantro
Directions
Cook Primera Red Rice
Wash 1 cup Primera Red Rice
Drain the water completely.
Add in 2 cups water.
Cook as usual.
Harira Preparation
Heat up some olive oil in a pot and add in 1 thinly sliced large onion and 1 cup of diced chicken.
Sauté and mix well.
Add in 1 cup of chickpea, 1 tablespoon of Himalaya salt, 1 Tablespoon of grated ginger, 1 ½ teaspoons of black pepper, 1 teaspoon of ground cinnamon and ½ teaspoon of turmeric powder.
Mix well.
Add 2 cans of tomato paste and 3 cups of water.
Mix well and bring to boil. Simmer for 10 minutes.
Add in 1 cup of lentils, 3 medium sized tomatoes, 1 cup of parsley, 1 cup of celery, ¼ cup of cilantro and ½ cup of Primera Red Rice.
