Chicken Kafta is a very popular chicken kebab in other middle eastern cultures. It is made of ground chicken that is mixed with other ingredients including onions, garlic fresh herbs and spices, to form a well-seasoned mixture. There are many variations depending on the spices we add.
Ingredients
Red Noodle Rice
1 Piece of Red Rice Noodle
1.5 Cups of Primera Red Rice
Olive Oil
3 Cups of Water
Chicken Kafta
1 ½ Cups of Ground chicken
1 Cup of Chopped Onions
1 Cup of Chopped Parsley
1 Teaspoon of Pepper
½ Teaspoon of Ground Cumin
½ Teaspoon of Paprika
¼ Teaspoon of Ground Coriander
¼ Teaspoon of Ground Cloves
¼ Teaspoon of Ground Nutmeg
¼ Teaspoon of Ground Cinnamon
¼ Teaspoon of Ground Cardamom
1½ Teaspoon of Salt
1 Tablespoon of Olive Oil
Parsley
Yougurt
Directions
Red Noodle Rice
Heat up some olive oil in a pan and add in 1 piece of red rice noodle. Brown the noodles on medium-high heat, stirring often, and be careful not to burn them.
Keep the browned noodles aside.
Heat up some olive oil in a cooking pot and add in 1.5 cups of Primera Red Rice.
Stir fry until fragrant.
Add 3 cups of water to the pot, and bring to a boil. Reduce the heat down to low, and simmer for about 20 minutes.
Add in the fried red rice noodles.
Mix well and simmer for another 10 minutes.
Chicken Kafta Preparation
Put 1.5 cups of ground chicken in a large bowl for mixing.
Add in 1 cup of chopped onions, 1 cup of chopped parsley,1 teaspoon of pepper, ½ teaspoon of ground cumin, ½ teaspoon of paprika, ¼ teaspoon of ground coriander, ¼ teaspoon of ground coves, ¼ teaspoon of ground nutmeg, ¼ teaspoon of ground cinnamon, ¼ teaspoon of ground cardamom, 1½ teaspoon of salt and 1 tablespoon of olive oil.
Mix well.
Form Kafta into patties or fingers.
Pan fried in a pan until golden brown.
Garnish with some chopped parsley and serve together with the Red Noodle Rice and plain yougurt.
