Beets are beautiful due to its radiant color but there is more to beets than just their attractive purple red color. Not much is consumed in Asian diets, beets are rich in betacyanin, as well as fiber, potassium, folate, calcium, iron, beta carotene, vitamin C, anthocyanins, and saponins and is low in calories. In the olden days, beetroots were used to treat pain such as headaches or even toothaches. Betalains, which is the pigment responsible for its bright red color can be extracted and used as a natural dye or even food coloring. We should consider adding beets into our daily food plans!
