Red Rice Upma

Preparation time: 15 minutes Cooking time: 30 minutes Serving: 4 pax Recipe

Ingredients:

• 1 ½ cups red rice (dry roast)
• 2 tbsp vegan ghee
• ¼ cup cashew nuts (cut into two)
• 1 stalk curry leaves
• 3 dry chilies
• 2 small onions (sliced)
• 4-5 cups water
• ½ cup sugar ½ tsp mustard seeds
• A little grated coconut
• A few carrots (grated) Notes: The red rice I used to make this recipe is from Primera Rice.

Cooking method :

1. Dry roast red rice first on a low heat. Remove and let it cool.
2. After that, grind all the red rice. Do not grind too fine. Set aside.
3. Then, prepare a pan, add vegan ghee and fry the cashew nuts first until brown. Remove and set aside.
4. Use the same pan, add mustard seeds, curry leaves, dry chilies and small onions. Stir until fragrant.
5. Add water, sugar, grated coconut, salt, and red rice that has been ground earlier. Stir well.
6. Add grated carrot. Stir until the red rice is cooked and slightly dry.
7. Add the fried cashew nuts. Stir well and adjust the taste. Ready to be served.
