Jamaican Fish with Coconut Sauce

Ingredients
- Primera red rice
- White radish
- Carrot
- Coriander
- Lettuce
- Cucumber
- Lime
- Roasted peanut
- Star anise
- Rice vinegar
- Organic sugar
- Himalayan salt
- Soy sauce
- Sesame oil
- Fish sauce
Directions
Cook red rice
- Wash 1 cup Primera red rice
- Drain the water completely
- Add in 2 cups water
- Cook as usual
Prepare fresh pickle:
- In a clean mixing bowl, add in carrot strip, white radish strip, 1/4 cup rice vinegar, 3 tablespoon organic sugar and 1/2 teaspoon Himalayan salt.
- Mix well.
- Marinate for 30 minutes.
- Add in 2 star anises, 2 tablespoons soy sauce, 3 tablespoon lime juice, 1 teaspoon sesame oil and 1 teaspoon fish sauce.
- Mix well.
Assemble the plate:
- In a clean mixing bowl, add in 1 cup of cooked Primera red rice, fresh pickle, pickle sauce and coriander.
- Mix well.
- Transfer to a plate.
- Top the plate with lettuce, cucumber, roasted peanut and pickle sauce.
- Ready to serve.
